Tina's Delight

Herbaceous and funky - this describe's my favorite goat Tina's diet as well as this dish. I've been making it as a breakfast mushroom toast for the past few months. I only just realized its good on just about everything!

Ingredients:

  • 1/2 lbs mushroom of choice - diced

  • 1 small onion - chopped

  • 3 cloves garlic - thinly sliced

  • 2 Tbsp bone broth, chicken or vegetable stock

  • 1-1/2 Tbsp goat cheese

  • parsley, sage, thyme

Directions:

  1. Heat butter or olive oil in a medium frying pan on med-low then add onions, salt lightly, and cook til yellowed then add mushrooms and turn the heat up to med-high.

  2. Cook on med-high until the mushrooms release there liquid and begin to brown. Turn the heat to medium and add your garlic and salt lightly again. Stir-in consistently until aromatic - about 30 seconds.

  3. Pour in broth and let it reduce by about half. Then add the goat cheese and fresh herbs. Stir well for 30 seconds and then remove from heat

  4. Serve over steak, cooked greens, toast, or mashed potatoes.
