Sweet & tangy glazed shiitake mushrooms served with white sticky rice.

Sweet Soy Glazed Shiitake Mushrooms over Sticky Rice

Ingredients

1lb shiitake mushrooms

Splash of vegetable oil

1 TBSP sesame oil

2 TBSP minced garlic

3 TBSP brown sugar

¼ cup tamari or soy sauce

Splash of mirin

1-2 tsp Sriracha, optional, to taste

1-2 tsp Cornstarch to thicken

Fresh green onions

Sesame seeds, optional
White rice, cooked to package directions

Directions

  1. Slice mushrooms 1/4" thick. Heat a deep saute pan on medium with oil or butter.

  2. Sautée mushrooms until browned or desired readiness, remove from pan into separate dish. Prepare the sticky rice, if using, as you prepare the sauce.

  1. In the same pan, turning heat to low medium, heat sesame oil and minced garlic. Cook for 1-2 minutes and add brown sugar allowing a small simmer, stirring constantly.

  2. Add splash of mirin, soy sauce and sriracha to desired taste. Add cornstarch if needed to thicken, ½ tsp at a time. The sauce should be sticky enough to coat the back of a spoon.

  3. Toss the mushrooms back in, top with green onions and sesame seeds, if desired and serve over sticky rice.
