Sweet & Spicy Scrambled Shrooms

This is both a low-carb AND hardy breakfast, packed with nutrients like potassium, vitamin B-12, and plenty of protein. Great for your post-morning workout! I give you the choice of three seasoning blends- all with a providing a spicy kick :)

Ingredients:

  • 1 Sweet Potato

  • 1/4 - 1/2 lbs Maitake Mushrooms

  • 1/2 Green Pepper

  • 1 Small Onion

  • 3 Eggs

    Choice of:

  1. Garlic, Thyme, Chili Flakes

  2. Paprika, Cumin, Chili Powder

  3. Maple Syrup and Chili Flake

Direction:

  1. Chop the sweet potatoes into 1/4" cubes and sauté with olive oil in a non-stick pan on medium. Try not to stir too often to get some crispy brown spots. in the meantime cop the mushrooms onion and pepper into similar size pieces.

  2. After about 7 minutes add the vegetables and mushrooms. Salt generously, this will help the ingredients release their moisture and brown faster.

  3. Add your seasonings of choice from the above list.

  4. Once the potatoes start to soften add 1 tbsp oil or butter to lubricate the pan then crack you eggs and scramble them up with everything else.
