In this recipe, we will show you how to make a vegan pulled pork sandwich using Oyster Mushrooms. These mushrooms have a meaty texture and when pulled and tossed with a delicious BBQ gravy, they make the perfect substitute for traditional pulled pork.
To start, you will need the following ingredients:
1 pound of King Oyster (trumpet), or black pearl or any Oyster Mushrooms
1 tablespoon of olive oil
1 onion, finely chopped
3 cloves of garlic, minced
1/2 cup (or more) of your favorite BBQ sauce
1/4 tsp cumin
1/4 tsp chili powder
1/4 tsp paprika
Salt and pepper to taste
4 burger buns, toasted
Now, let's get cooking!
Step 1: Clean and trim the Pink Oyster Mushrooms, removing any tough stems. Using your hands or a fork, gently pull the mushrooms into shreds.
Step 2: Heat olive oil in a large skillet over medium heat. Add the chopped onion, sautéing until they become translucent.
Step 3: Add the shredded mushrooms to the skillet and cook for about 5 minutes on medium to high, until they start to brown. Add garlic and seasoning (cumin, paprika & chili powder)
Step 4: Allow the mushrooms to get a nice caramelization and crispy edges to develop nice texture and rich flavor. About 10 minutes.
Step 5: Lower the heat to low-medium and stir in the BBQ sauce, coating the mushrooms evenly. Allow the mixture to simmer for an additional 5 minutes, allowing the flavors to meld together.
Step 6: Season with salt and pepper to taste.
Step 7: Assemble your sandwiches by placing a generous amount of the vegan pulled pork mixture onto each toasted bun.
