Mushsteak (Meatless Cheesesteak)

1lb fresh Shiitake mushrooms, sliced

Provolone cheese, sliced

1-2 Bell peppers, sliced

1-2 onions, onions

3-4 TBSP olive oil

1-2 TBSP Worcestershire sauce

2 cloves minced garlic

1 TBSP brown sugar

Serve on a toasted roll

  1. Remove the tough part of shiitake stems. Cut the cap into long slices about ½ inch thick. Chop the onions and peppers into long thin slices. Mince garlic.

  2. Add olive oil to a large frying pan on medium-low heat. Add peppers & onions to the pan and slowly caramelize them, stirring every 3-5 minutes. When the onions start to become translucent, add the shiitakes. Season with salt and pepper and turn the heat up to medium-high. Frequently stir allowing all sides of the mushrooms to get brown.

  3. Once the mushrooms have released their liquid, add the minced garlic. Cook for two more minutes, stirring frequently. Add worcestershire sauce and brown sugar, continue to mix. The sugar will caramelize over the next five minutes.

  4. Cut a roll open and stuff it with as much Mushsteak mixture as you can. Top with provolone cheese and toast until the cheese is melted and enjoy your tasty meatless cheesesteak!
