Maitake Mushroom Crostini

A surprisingly simple appetizer that is sure to impress! Substitutions are easy, so let your creativity run wild!

Ingredients:

1 small baguette

¼ lbs maitake mushroom (Also works great with chestnut or shiitake)

1 medium shallot

4 oz goat cheese (sub cream cheese, brie, or any other spreadable cheese you like)

1 sprig fresh sage

1 Tbsp butter

1 Tbsp brown sugar or maple syrup

Directions:

  1. Remove goat cheese from the fridge and allow it to come to room temp. Dice the mushrooms, shallot, and sage. Cut the baguette on a bias.

  2. Heat a small nonstick frying pan on medium heat and add the butter. When melted add mushrooms and shallot. Cook and stir constantly for about 5 minutes then add the brown sugar or maple syrup. Now stir this constantly for about 2 minutes making sure it is well mixed and doesn;y start to burn. Remove from pan to a bowl.

  3. Toast the baguettes. Spread goat cheese on the toasted bread and top with the diced sage. Spoon the mushroom mixture on top and serve.
