Lions Mane Cakes

Air Fried to perfection, enjoy this crab imitation dish any time of the year

Lion's Mane “Crab” Cakes (w/ tartar sauce)

Ingredients

1lb lionsmane, shredded

1 large egg

½ cup bread crumbs, panko reccomended

¼ cup green onion or chives, finely sliced

2 TBSP fresh parsley, finely chopped

2 TBSP mayonnaise/relish

2 Tsp dijon mustard

1.5 tsp Worcestershire sauce

1 tsp old bay, optional

1 lemon

Sriracha, optional

Salt & pepper to taste

Directions:

Preheat the oven or airfryer to 400F.

Shred the lion's mane mushroom into small pieces, resembling chunks of crab meat.

Transfer to a large skillet with a gentle coating of oil. Cook over medium heat until all the water from the mushrooms has been released, drain if necessary

In a a large bowl, combine egg, green onion, mayo, mustard, worcestershire, spices & lemon. Mix until well combined. Add the mushrooms and bread crumbs and gently mix until fully combined.

Form into equal sized patties (about 6)

Conventional oven:

Place cakes on a baking sheet lined with parchment and coated with cooking spray or oil.

Bake for 15-20 minutes or until golden brown.

AirFryer:
Place cakes in basket or rack generously coated with cooking spray.

Bake for 5-10 minutes (depends on the strength of the air fryer, keep an eye on them!) or until golden brown.


Quick Tartar Sauce:
Sour cream or plain yogurt
2 TBSP mayo
Old bay seasoning, optional
½ lemon, juice & zest
Salt & pepper
Chives or onions, optional
