Kale & Mushrooms #3 - Lion's Mane "Pulled Pork" Wrap

Ingredients:

"Pulled Pork"

  • 1 lbs lion's mane shredded by hand

  • 1 medium onion

  • 3 Tbsp butter*

  • cumin, paprika, chili powder

  • Your favorite BBQ sauce ( I used STUBB'S Sweet Heat)

Assembly

  • 2 wraps

  • 4 kale leaves, thoroughly messaged

  • Mayo or sour cream or hummus

  • microgreens

  • pickles

Directions:

"Pulled Pork"

  1. Cook Lion's mane on med-high heat in a large non-stick pan. No butter or oil to start. You want the LM to release most of its liquid and to brown all around. Cook onions in s separate pan on medium low with olive oil. Cook until soft then set aside in a mixing bowl.

  2. After the LM releases its liquid and begins to brown, salt generously and stir well. Then add about 1 tsp cumin, paprika, and chili powder. Then stir in the butter. Cook until the LM is will coated and shiny.

  3. Add to the bowl with the onions and add about 1/4 cup of bbq sauce. Mix well and assemble your wrap.
