Kale & Mushrooms #3 - Lion's Mane "Pulled Pork" Wrap

Ingredients:
"Pulled Pork"
1 lbs lion's mane shredded by hand
1 medium onion
3 Tbsp butter*
cumin, paprika, chili powder
Your favorite BBQ sauce ( I used STUBB'S Sweet Heat)
Assembly
2 wraps
4 kale leaves, thoroughly messaged
Mayo or sour cream or hummus
microgreens
pickles
Directions:
"Pulled Pork"
Cook Lion's mane on med-high heat in a large non-stick pan. No butter or oil to start. You want the LM to release most of its liquid and to brown all around. Cook onions in s separate pan on medium low with olive oil. Cook until soft then set aside in a mixing bowl.
After the LM releases its liquid and begins to brown, salt generously and stir well. Then add about 1 tsp cumin, paprika, and chili powder. Then stir in the butter. Cook until the LM is will coated and shiny.
Add to the bowl with the onions and add about 1/4 cup of bbq sauce. Mix well and assemble your wrap.
