Kale & Mushrooms #2 - Lemon-Miso Vinaigrette

Ingredients:

  • 1/4 lbs mushrooms of choice roughly chopped

  • half bundle of kale stemmed and chopped

  • 1 small onion

  • 1-1/2 tbsp light miso paste (white/yellow)

  • 2 tbsp hot water

  • 1 tbsp olive oil

  • Juice of 1 lemon

  • S & P & Honey to taste

Directions:

  1. Mix miso in the hot water intil dissolved. mix in the rest of the ingredients.

  2. Cook mushrooms and onions in the pan on med-high heat with 1/4 cup of water.

  3. When the water is almost evaporated add the kale. Let the mushroom broth steam the kale and mix in as it begins to wilt.

  4. When the water is fully evaporated turn the heat of and mix in the vinaigrette.
