Kale & Mushrooms #1 - Bacon Fried Chips

Let's take everything nutritious about kale and mushrooms and even it out with a "healthy" coating of bacon fat :P

Ingredients:

  • 1/4 lbs chestnut mushrooms

  • Half bunch of tuscan kale

  • 4 Tbsp bacon fat*

  • Salt & P

* Any fat of choice works here, tallow, oil or whatever greasy mess you have on hand.

Directions:

  1. Heat oven to 425F. Melt bacon fat in a small skillet just enough to fully liquify.

  2. Chop kale and mushrooms into bite size piece. Mushrooms will shrink so you can leave them a bit larger.

  3. Toss everything together in a bowl. Lay out kale and mushrooms on separate cookie trays lined with parchment paper.

  4. Cook until crispy. The kale will finish before the mushrooms.
