Fungi Balsamico

Simple mushroom stir-fry finished with balsamic.

Fungi Balsamico


½ lbs oyster mushrooms, sliced or shredded

1 small onion, sliced

2-3 garlic cloves, minced

5-10 chopped sun-dried tomatoes

2 large handfuls spinach

2-3 TBSP balsamic (vinegar, dressing, or reduction)

3-4 TBSP Olive oil


  1. Heat frying pan on medium heat with 1-2 TBSP good olive oil.

  2. Slice onions and oyster mushrooms and add to the pan. Once the mushrooms cook down and release liquid, they will begin to carmelize, about 10-15 minutes.

  3. Add more oil if needed. Once mushrooms have begun to brown and get crispy, add minced garlic.

  4. Allow garlic to become fragrant, but not burnt, about 30 seconds. Add the sun dried tomatoes and spinach. Stir until the spinach is wilted.

  5. Remove from heat and drizzle with balsamic. Enjoy!


Toasted pine nuts or sunflower seeds would be a lovely addition to this.

May be served with rice, pasta, risotto, farro or any other grain.
Would pair lovely with a milanese dish and a light red wine.
