Fried Mushrooms

Maitake (hen of the wood) and oyster mushroom varieties fry up beautifully, satisfying that greasy, crunchy craving.

Air Fryer Recipe*


1 lb of any oyster mushrooms pulled apart into individual fans

1 egg, beaten

1-1.5 cups seasoned breadcrumbs

¼ C coconut oil, melted


Preheat airfryer to 425F. Thoroughly coat mushrooms in egg, followed by a quick toss in breadcrumbs and then place in airfryer for 5-10 minutes or until golden brown. Remove to a plate lined with paper towel and salt to taste while still hot. Cook in batches and serve as an appetizer with a sauce of your choosing (chipotle or tartar sauce are great options!)

Methods described above are using an InstantPot air fryer fitted with two baking racks; cooking temperatures may vary, be sure to experiment with cooking times to match your needs.

Alternate Coatings to Experiment With:

Vegan Option: Flour Seasoned with paprika, garlic, onion and turmeric powder mixed with water until smooth, save half of the dry flour mixture for a second coating

Buttermilk + Panko & Flour seasoned with Paprika + Cumin
